Mämmi Mud Cake - Mämmimutakakku





Easter is approaching! Have you tried mämmi, traditional Finnish Easter dessert? It's malted rye pudding and can be made without sugar if one is lucky and patient enough (it depends on the malting process). I've posted a recipe many years ago, so if you can't buy mämmi anywhere (the chances outside Finland are probably very scarce...), you could basically try making it yourself (if you can find malted rye... that might be another problem...). Mämmi has lots of fiber so it's a very healthy dessert option in that sense.

Mämmi divides people: others love it, others hate it. I love it: eaten with cream poured on top of it, a small spoonful at a time so that every spoonful is coated with cream. Some add sugar too, but I prefer to eat it with the sweetness it already has (unless it's "no added sugar" variety). The sweetness comes naturally to it as starches are broken down to sugars during the malting process. You can find organic mämmis in Finland that don't have added sugar. I prefer to add a tiny amount of sugar to those, but it differs from brand to brand.

You can also use mämmi as a base to make bread, sweet pastries and also desserts: parfaits, ice-creams, mousse, chocolate mousse etc, even truffles!!!! This time I baked a chocolate cake with it! As mämmi is thick and muddy itself, so it suits very well to serve .

Are you having an Easter break? We are having a two week break which I'm so needing. Time seems to be passing very slowly while waiting for the vacation but on the other hand it goes so quickly (like it seems I can't get anything done). Everything seems to be still in progress here at our home and my work. I've been trying to get the organizing done, buy some needed items and sell some furniture we don't need anymore but it seems no one wants to buy anything anymore. The exterior renovations have started at our home building, and half of our windows have been covered with wooden boards and plastic film. It feels basically like living in a cave. So when it finally started to be light again, we are back to darkness. It's awful for the soul but also awful for my photography. I'm really starting to wonder if I should start shooting with artificial light, as otherwise I can't takes photos here during the whole summer. (Well, I really haven't had time or energy to cook either, but I hope that will change once we get the apartment nice.) Otherwise I'll have to resort to the cottage for the whole summer...

Our Easter plans include travelling to Germany by car! I love spending time abroad during Easter, Christmas etc. It's fun to see how other nations celebrate. I'm also so excited and thrilled about the ferry trip over the Baltic Sea and then the long drive through Sweden, Denmark and Germany!!! We will be spending one night in Lübeck and I'm waiting forward to trying their marzipan! The hotel we booked looks so charming I can't wait to see our room! I hope we'll get there early, which means we don't have time to lose while driving through Sweden and Denmark. If you have any tips for a great lunch spot on E4 in Sweden, I would be very glad to hear it. So far I've spotted these promising places:

PM & Vänner i Växjö: though it's quite a hop from our route, so probably we won't be going there this time.
Toftaholm Herrgård (Toftaholm Manor): this seems promising, near by the road and they serve lunch on Saturdays, so if we are passing them at a suitable lunch time, I'd guess we'll make a stop there.

Chocolatey mud cake made from mämmi, a malted rye pudding meaning lots of fiber and no wheat!

Ingredients:
  • 200 g dark chocolate
  • 150 g butter
  • 3 eggs
  • 500 g mämmi (Finnish malted rye pudding)
  • 2 Tbsp cocoa powder
Instructions:
  1. Line the bottom of 24 cm springform pan with baking paper. Preheat the oven to 175 C.
  2. Melt chocolate with butter.
  3. Whisk eggs until foamy.
  4. Add mämmi to the egg foam. Sieve cocoa powder into the mixture.
  5. Stir melted chocolate to the batter.
  6. Pour the batter to the prepared cake tin. Bake in middle rack for 25 minutes. The middle part of the cake will be very jiggly when you take the cake out of the oven, but will firm up once cooled.
  7. Serve with vanilla ice cream or whipped cream or just with a very good coffee.

Tahmaisen suklainen mämmisuklaakakku pääsiäisen jälkiruoaksi! Mämmin maltainen maku sopii hyvin yhteen täyteläisen tumman suklaan kanssa.

Ainekset:
  • 200 g tummaa suklaata
  • 150 g voita
  • 3 munaa
  • 500 g mämmiä
  • 2 rkl tummaa kaakaojauhetta
Valmistusohjeet:
  1. Vuoraa 24 cm irtopohjavuoan pohja leivinpaperilla. Esilämmitä uuni 175 asteeseen.
  2. Sulata suklaa voin kanssa.
  3. Vaahdota munat vaaleaksi vaahdoksi.
  4. Lisää mämmi munavaahtoon. Siivilöi joukkoon kaakaojauhe.
  5. Kääntele joukkoon sulatettu suklaa-voiseos.
  6. Kaada taikina kakkuvuokaan ja paista keskitasolla 25 minuuttia. Kakun keskiosan tulee olla pehmeän hyllyvä tässä vaiheessa. Se kiinteytyy kuitenkin, kun kakku jäähtyy.
  7. Tarjoa vaniljajäätelön, kermavaahdon tai hyvän kahvin kanssa.
