Tomato Soup with Curry Spices





This tomato soup is not the traditional one you normally have. It's spiced with curry spices and you can add coconut milk too. My version is quite mildly spiced, since I don't like very spicy foods, but you can vary to spiciness with your curry powder: choose a spicier variant or add some chili, if you want more heat. I've been cooking this for years: in fact I had to rewrite the recipe as the old paper I had initially written it to became too tattered. With that I mean to say: it's delicious and you should try it too! You can make the soup year-round (as it's made from canned tomatoes), but I find it suits best to this time of year: when the autumn starts to feel in the air but the days are still warm.

P.S. This tomato soup is meant to be chunky, with the crushed tomatoes and the small onion bits, but if you prefer smooth soups, you can blend it of course.

Tomato Soup

This tomato soup is not the traditional one you normally have. It's spiced with curry spices and you can add coconut milk too.

Ingredients:
  • 2 onions, finely diced
  • 2 Tbsp vegetable oil
  • 2 tsp ground coriander seeds
  • 2 tsp curry powder
  • 1 tsp jeera
  • 800 g crushed tomatoes
  • a dash of sugar
  • 400 ml water
  • 1 vegetable broth cube
  • (200-400 ml coconut milk, optional)
  • salt and pepper
  • On top:
  • pine nuts or sunflower seeds, roasted
Instructions:
  1. Saute the onion in vegetable oil. Once translucent, add the spices and saute until fragrant.
  2. Add the crushed tomatoes, sugar (to balance the tartness of tomatoes), water and vegetable broth cube and let simmer about 15-20 minutes.
  3. If using coconut milk, add it and heat up the soup.
  4. Season with salt and pepper.
  5. Finish with a sprinkle of pine nuts or sunflower seeds.

Tomaattikeitto

Currymausteinen tomaattikeitto, johon voit halutessasi lisätä myös kookosmaitoa.

Ainekset:
  • 2 sipulia, pieninä kuutioina
  • 2 rkl öljyä
  • 2 tl jauhettua korianteria
  • 2 tl curryjauhetta
  • 1 tl juustokuminaa eli jeeraa
  • 800 g tomaattimurskaa
  • ripaus sokeria
  • 4 dl vettä
  • 1 kasvisliemikuutio
  • (200-400 ml kookosmaitoa halutessasi)
  • suolaa ja pippuria
  • Päälle:
  • pinjan- tai auringonkukansiemeniä (paahdettuna)
Valmistusohjeet:
  1. Kuullota sipuli öljyssä. Kun se on muuttunut läpikuultavaksi, lisää mausteet ja paista, kunnes pannulta nousee mausteinen tuoksu.
  2. Lisää tomaattimurska, sokeri, vesi ja liemikuutio ja keitä noin 15-20 minuuttia.
  3. (Lisää lopuksi kookosmaito ja lämmitä keitto.)
  4. Mausta suolalla ja pippurilla.
  5. Viimeistele pinjan- tai auringonkukansiemenillä.
