Fluffy Cottage Cheese Pancakes with Honey&Butter Cornflakes




Shrove Tuesday aka Fasting Tuesday aka Pancake Tuesday is approaching and these pancakes are a perfect treat for your weekend morning! Despite the whole Finland is concentrating on Shrove Buns (semlor or whatever you call them), I decided to go with pancakes instead (but I would never skip eating Shrove buns :D ). They are so soft and fluffy and delicious and the honey&butter cornflakes add a very nice crunch to them! Of course you can serve them with jam or berries too. I also like to think that the cornflakes make them even more breakfast-like. Finns don't usually eat sweet things in the morning; it's considered very unprotestant LOL. Only oatmeal and dark bread are approved ;) Due to the eggs and cottage cheese they are almost like a proper meal too so you can calm your inner little protestant with that maybe.

I tried the recipe also with gluten free flour mix I already had (Semper coarse flour, which I sieved to remove the roughest parts). I was so happy to find the recipe works very well with it too.

Fluffy pancakes with crunchy honey&butter cornflakes for Pancake Tuesday!

Ingredients:
  • 65 g cake flour or glutenfree flour (I used Semper coarse flour, but sieved the rough parts away)
  • 1/4 tsp baking powder
  • 2 egg yolks
  • 10 g sugar
  • 100 g cottage cheese
  • 120 ml milk
  • 2 egg whites
  • a pinch of salt
  • 7 g sugar (roughly 2 scant tsp)
  • butter or oil, for frying
  • Honey&Butter Cornflakes:
  • 1 Tbsp butter
  • 1 generous tsp honey
  • 25 g cornflakes
  • For decoration:
  • powdered sugar
Instructions:
  1. Blend the cottage cheese with milk into even mass. Add the egg yolks and 10 g sugar, flour and baking powder. Mix until even.
  2. Whip the egg whites with a pinch of salt and 7 g sugar until stiff peak stage. Fold a small amount of the meringue into flour mixture and stir even. Add the remaining meringue in two batches and fold until combined.
  3. Heat a frying pan over low/medium heat. Butter or oil the pan. Spoon about 50 ml (appr. scant 1/4 cup) of batter/pancake to the pan and fry until golden brown (2-4 minutes/side).
  4. Serve with honey&butter cornflakes. (You can keep the pancakes in a preheated oven until serving to keep them warm.)
  5. Cornflakes: Heat the butter and honey in a microwavable bowl until the butter melts and the mixture turns runny (about 20-40 seconds). Pour on the cornflakes and stir even.

Kuohkeanmehevät pannukakut muroherkun kanssa.

Ainekset:
  • 65 g erikoisvehnäjauhoa tai gluteenitonta jauhoa (käytin Semperin karkeaa jauhoa, josta siivilöin karkeimmat osat pois)
  • 1/4 tl leivinjauhetta
  • 2 keltuaista
  • 10 g sokeria
  • 100 g raejuustoa
  • 120 ml maitoa
  • 2 valkuaista
  • ripaus suolaa
  • 7 g sokeria (vajaa 2 tl)
  • voita tai öljyä, paistamiseen
  • Hunajavoimurot:
  • 1 rkl voita
  • 1 kukkurallinen tl hunajaa
  • 25 g maissihiutaleita
  • Koristeluun:
  • tomusokeria
Valmistusohjeet:
  1. Hienonna raejuusto tasaiseksi maidon kanssa sauvasekoittimella tai tehosekoittimessa. Sekoita mukaan keltuaiset, sokeri (10 g), jauhot ja leivinjauhe ja sekoita tasaiseksi.
  2. Vatkaa valkuaiset kovaksi vaahdoksi suolan ja 7 g sokeria kanssa. Yhdistä ensin pieni määrä vaahtoa taikinaan ja sitten kääntele loput varovasti sekaan kahdessa erässä.
  3. Lämmitä paistinpannu miedolla keskilämmöllä ja voitele pannu joko öljyllä tai voilla. Nostele pannulle taikinaa n. reilu 0,5 dl/pannukakku. Paista kullanruskeaksi molemmilta puolilta (n.2-4 minuuttia /puoli).
  4. Tarjoile hunajavoimurojen kanssa. Voit nostaa valmiit pannukakut lämpimään uuniin odottamaan tarjoilua, jotta ne pysyvät kuohkeina ja lämpiminä.
  5. Hunajavoimurot: Mittaa maissihiutaleet kulhoon. Lämmitä voita ja hunajaa mikrossa, kunnes voi sulaa ja koko seos muuttuu juoksevaksi (n. 20-40 s). Kaada seos maissihiutaleiden päälle ja sekoita niin, että hunajavoi leviää maissihiutaleiden pintaan.
