Baltic Cruise Shrimp Sandwich




When one can't get to a cruise, the cruise has to come to one. In addition to smörgåsbord, I don't know what other dish would be as essential to a cruise than a shrimp sandwich. If you ever get to Helsinki-Stockholm cruise, you have to try one. A big pile of juicy shrimp with boiled egg and mayonnaise. Luckily they are quite simple to make at home too, if you don't count the peeling of the shrimp. The ones sold with the peel taste much better than those readily peeled. Since this dish is all about the shrimp, I encourage you to buy those with the peel and just peel them yourself.

The most traditional bread is white toast bread, but you can use basically any kind of bread. I wouldn't choose too tough a bread, as it would be very difficult to eat the sandwich with fork and knife, but that's possible too. You can either toast the bread or leave it untoasted. Some swear by toasting it on the pan in butter. I like to toast it without butter and then spread only mayonnaise on top. I prefer Japanese mayonnaise over any mayo: it tastes the best.











Shrimp Sandwich

An iconic Baltic cruise dish: sandwich with a big pile of juicy shrimp.

Ingredients:
  • 500 g (frozen) unpeeled shrimp, thawed according to the package
  • 2 eggs
  • 2-4 Tbsp mayonnaise
  • 2 slices of bread (white toast is most traditional; I used levain bread this time)
  • lettuce
  • dill
  • lemon wedges, to serve
Instructions:
  1. Cook the eggs for 7-8 minutes (until hard-boiled), peel them and leave to cool.
  2. Peel the shrimp.
  3. Toast the bread slices and let them cool a few minutes before spreading on 1-2 tsp mayo / slice.
  4. Arrange the lettuce on top and spread the rest of the mayo on top.
  5. Slice the eggs and arrange with the shrimp on top of the lettuce.
  6. Decorate with dill and serve with lemon wedges.

Katkarapuleipä

Perinteinen ruotsinristeilyn herkku: jos et pääse risteilylle, tuo risteily kotiisi ;)

Ainekset:
  • 500 g kuorimattomia (pakaste)katkarapuja, sulatettuna pussin ohjeen mukaan
  • 2 kananmunaa
  • 2-4 rkl majoneesia
  • 2 viipaletta leipää (paahtoleipä on perinteisin vaihtoehto; tällä kertaa käytin levain-leipää)
  • salaattia
  • tilliä
  • sitruunaa viipaleina tai lohkoina
Valmistusohjeet:
  1. Keitä kananmunia noin 7-8 minuuttia, kuori ja jätä jäähtymään.
  2. Kuori katkaravut.
  3. Paahda leipäviipaleet. Anna niiden jäähtyä hetki ja voitele sitten 1-2 teelusikallisella majoneesia.
  4. Järjestä salaatinlehdet leipien päälle ja pursota lisää majoneesia salaatin päälle.
  5. Viipaloi kananmunat esim. munaleikkurilla ja järjestä munaviipaleet katkarapujen kanssa leipien päälle.
  6. Koristele tillillä ja tarjoile sitruunan kanssa.
