Fake Chocolate Pudding aka Carob Pudding




Have you tasted carob? It's one of those foods eaten by "raw foodists". But don't let that stop you even if you are not one of them as it's very delicious. It can be used like cocoa powder and is actually much better tasting in my opinion: somewhat sweeter and not as bitter as pure cocoa powder, so you don't need to add as much sugar as for the "real" chocolate puddings! (I've included the amount for cocoa powder too, if you want to try this recipe with cocoa.) Though I have to warn you carob is grainier than cocoa, so this pudding is not as silky as a chocolate pudding would be. So if the silkiness is what you are after, use cocoa powder.

P.S. Happy birthday Toddybear! He is the sweetest dog there is. Btw, dogs can have carob too! So if you want to make your dog a "chocolate" treat, carob is an option.









Carob Pudding

Carob pudding is like a chocolate pudding but without cocoa or chocolate.

Ingredients:
  • 250 ml (soy) milk
  • 3 Tbsp unsweetened carob powder (or 1,5 Tbsp unsweetened cocoa powder)
  • 2 level tsp potato starch
  • 1/4 tsp vanilla extract (or 1 tsp vanilla sugar)
  • 2 Tbsp sugar (add +1 Tbsp, if using unsweetened cocoa powder)
  • a pinch of salt
  • To serve: berries or Dalgona coffee (foam) for instance
Instructions:
  1. Put all ingredients in a small saucepan and mix well to avoid any lumps. Don't whisk too vigorously if you don't want to have bubbly pudding (it happened to me on the photo shooting occasion).
  2. Cook over medium heat until mixture thickens and boils, stirring constantly to make sure it does not stick to the bottom. Once the first bubble rises to surface, take away from heat.
  3. Pour into serving dishes, cover with plastic wrap and let cool before serving.

Carob-vanukkaat

Carob-vanukas on kuin suklaavanukas, mutta siinä ei ole kaakaota eikä suklaata.

Ainekset:
  • 2,5 dl soija- tai muuta maitoa
  • 3 rkl carob-jauhetta (tai 1,5 rkl makeuttamatonta kaakaojauhetta, esim. Fazer Ögön tai Van Houten)
  • 2 tasaista tl perunatärkkelystä
  • 1/4 tl vaniljauutetta (tai 1 tl vaniljasokeria)
  • 2 rkl sokeria (lisää +1 rkl, jos käytät kaakaojauhetta)
  • ripaus suolaa
  • Tarjoiluun: marjoja tai esim. Dalgona-kahvivaahtoa
Valmistusohjeet:
  1. Sekoita kaikki ainekset yhteen pienessä kattilassa. Älä vispaa liian intensiivisesti, jos et halua kuplaista vanukasta.
  2. Lämmitä seosta keskilämmöllä. Sekoita koko ajan, jotta se ei tartu pohjaan. Kun seos pulpahtaa, ota pois levyltä. Sen tulisi olla nyt melko sakeaa, mutta se jähmettyy lisää jäähtyessään.
  3. Kaada tarjoiluastioihin, peitä kelmulla ja anna jäähtyä jääkaapissa muutama tunti ennen tarjoamista.
