Christmas Onions - Joulusipulit

Don't you just love those small firm onions that look like big pearls once peeled. I love how they look and how they taste (once cooked or pickled). Even if they are pickled or sautéed they get this sweet flavour. The only drawback is that they are quite burdensome to peel, especially if you are handling half a kilo of them! I learned a trick from Julia Child's Mastering the Art of French Cooking on how to peel them more easily, which is to blanch them quickly (5-10 sec) in boiling water and then cool them under running water. The skin should then come off quite easily, when you cut the ends off (but only as little as possible), after which you can peel the outer layer off.

Pickled onions; Onions

These Christmas-spiced pearl onion pickles are a perfect gift! You could also divide the amount to two smaller jars and keep one yourself to serve on your own Christmas table.

Ingredients:
  • 500 g pearl onions
  • water
  • salt
  • Pickling liquid:
  • 150 ml water
  • 150 ml pickling vinegar (10%)
  • 1 Tbsp coarse salt
  • 1 Tbsp sugar
  • 1 thumb-sized piece of ginger, peeled and sliced
  • 1 cinnamon stick
  • 2 star anises
Instructions:
  1. Bring a big pot of water to a boil and boil the onions for a minute.
  2. Remove the water, add cold water on top and once the onions are cool enough to handle, peel them.
  3. Fill the pot with fresh water, bring it to a boil and add the peeled onions and some salt (about 1/2-1 tsp/litre). Cook them about 3-5 minutes (depending on the size); so that they still stay firm.
  4. Remove the water and pour cold water on top as to stop cooking.
  5. Put the onions to a sterilized jar.
  6. Measure the ingredients of the pickling liquid to a small pot. Bring to a boil. Take away from heat and leave to cool for a couple of minutes.
  7. Pour the liquid on top of the onions: it should cover the onions completely: if not, add some boiled vinegar-water (1:1 ratio).
  8. Close the jar and keep the onions in fridge for a minimum of 2 days before serving them. They will keep at least a month if stored in fridge.

Mausteiset hillosipulit purkissa

Näistä hillosipuleista saat annettavaksi mausteisen lahjan, jos raaskit luopua niistä itse! Tai jos jaat määrän kahteen pienempään purkkiin, voit ehkä pitää toisen niistä ;)

Ainekset:
  • 500 g pikkusipuleita
  • vettä
  • suolaa
  • Mausteliemi:
  • 1,5 dl vettä
  • 1,5 dl väkiviinaetikkaa
  • 1 rkl karkeaa suolaa
  • 1 rkl sokeria
  • 1 peukalonkokoinen pala inkivääriä, kuorittuna ja viipaloituna
  • 1 kanelitanko
  • 2 tähtianista
Valmistusohjeet:
  1. Kiehauta iso kattilallinen vettä ja kalttaa sipulit. Kaada vesi pois, täytä kattila kylmällä vedellä ja kuori sipulit, kun ne ovat jäähtyneet tarpeeksi.
  2. Täytä kattila tuoreella vedellä ja kiehauta. Lisää suolaa n. 1/2-1 tl/litra vettä. Keitä sipuleita n. 3-5 minuuttia, siten että ne säilyvät vielä napakoina.
  3. Jäähdytä sipulit kylmän veden alla. Laita ne steriloituun purkkiin.
  4. Mittaa liemen ainekset pieneen kattilaan ja kiehauta. Anna liemen jäähtyä muutama minuutti ja kaada se sipulien päälle. Jos sipulit eivät täysin peity, kiehauta kattilassa lisää etikka-vesi (1:1) -seosta niin, että se riittää peittämään sipulit.
  5. Sulje purkki ja säilytä jääkaapissa vähintään 2 päivää ennen tarjoamista. Sipulit säilyvät ainakin kuukauden jääkaapissa.
