German Cookies: Schneeflocken

I just love the variety of cookies the Germans still bake around Christmas time. These "snowflake" cookies are one of the those. They are perfectly crumbly, melt in your mouth cookies and they need only five ingredients, which you might already have in your pantry.

Happy baking!

Perfectly crumbly, melt in your mouth cookies needing only five ingredients, which you might already have in your pantry.

Ingredients:
  • 125 g soft butter
  • 1/2 tsp vanilla powder or the seeds of a vanilla pod
  • 50 g powdered sugar
  • 30 g all-purpose flour
  • 125 g potato starch
Instructions:
  1. Whisk the soft butter fluffy with sugar and vanilla powder (or vanilla seeds).
  2. Knead in the all-purpose flour and potato starch. (The dough might seem very dry but just keep on kneading, it will eventually build into a proper dough).
  3. Form the dough into a ball and wrap it in cling-film. Place in fridge for 1 hour.
  4. Warm up the oven to 200 C. Put a baking paper on an oven tray.
  5. Divide the dough into cherry sized pieces and roll them into balls. Put them on baking paper and press with a fork from the top to squish a little.
  6. Bake in the upper middle rack for about 10 minutes.
  7. Leave to cool.
