Gingerbread in a mug - Piparmukikakku




I love Christmas and its preparations, the festivity and the feel of waiting. How early do you start to preparing for your Christmas? This post is a part of my annual Christmas series on the blog! Check my Christmas Calendar, too!

I was a bit late in making mug cakes and not very thrilled with the first experiment as it (a choco cake) ended up very gummy in texture. But from that I got the idea to try a gingerbread version as that gummy texture resembled somehow gingerbread dough (which I prefer any day over baked gingerbread). Since then I've learned to bake these the right time (short enough) to not make them gummy. Start with slightly too short a time and let the heat divide evenly for a minute after baking. That way you get neither a gummy nor an underbaked cake. If you want more dough-y result, bake less.

Gingerbread Mugcake

Gingerbread dough is far better than baked cookies! You can leave this a bit raw if you prefer dough to cookies.

Ingredients:
  • 2 Tbsp all-purpose flour (or to make glutenfree: 2 Tbsp fine buckwheat flour and 1 Tbsp coconut flour)
  • 1 Tbsp coconut flour (or sub 1 Tbsp all purpose flour)
  • 1/8 tsp baking powder
  • 1/2 tsp cinnamon
  • a pinch of ground ginger
  • a pinch of cardamom
  • a pinch of salt (or two, if you are using oil)
  • 1 Tbsp dark syrup or sugar
  • (scant) 1 Tbsp vegetable oil or melted butter
  • 1 Tbsp milk or water or buttermilk
  • On top: powdered sugar or sprinkles
Instructions:
  1. Stir all dry ingredients together in a mug and add the wet ingredients. Stir quickly into even batter.
  2. Bake in a microwave oven, full power, about 30(-40) sec.
  3. Leave the cake in the microwave for a minute to let the heat divide evenly.
  4. Sprinkle on powdered sugar or sprinkles.

Piparkakkuinen mukikakku

Nopea yhden annoksen pipari(taikina)kakku mukissa! Jos jätät kakun raaemmaksi, lopputulos muistuttaa kuin piparitaikinaa.

Ainekset:
  • 2 rkl vehnäjauhoa (tai gluteenittomaan versioon 2 rkl hienoa tattarijauhoa)
  • 1 rkl kookosjauhoa (tai 1 rkl vehnäjauhoa)
  • 1/8 tl leivinjauhetta
  • 1/2 tl kanelia
  • ripaus inkivääriä
  • ripaus kardemummaa
  • ripaus suolaa (tai kaksi ripausta, jos käytät öljyä)
  • 1 rkl tummaa siirappia tai sokeria
  • (vajaa) 1 rkl öljyä tai sulatettua voita
  • 1 rkl maitoa tai vettä tai piimää
  • Pinnalle: tomusokeria tai koristerakeita
Valmistusohjeet:
  1. Sekoita kaikki kuivat ainekset yhteen mukissa, lisää (siirappi), rasva ja maito/vesi/piimä. Sekoita nopeasti tasaiseksi.
  2. Kypsennä mikrossa täydellä teholla noin 30(-40) sekuntia.
  3. Jätä muki mikroon noin minuutiksi, jotta lämpö tasaantuu ja kypsentää koko kakun.
  4. Ripottele pinnalle tomusokeria tai koristerakeita.
